Lemon Garlic Chicken with Gravy and Rice (aka: Husband’s favorite)

For those of you that know me, you know I am not the type to follow a recipe. (I am, however, a rule-follower.)

When it comes to cooking, I like to take ideas and blend them together to make my own recipes. And because I don’t use recipes or write anything down, I never make the exact same thing twice. (This is what my husband hates the most.) This is a combination of a few different recipes I saw on Pinterest, but mostly just me recalling from memory what I thought sounded good! Every measurement I useĀ is “approximate”, so I’m really sorry if this turns out horribly for you. But it sure was wonderful for my family!

Ingredients:

1 lb chicken breasts (usually about 3 breasts)

1/2 cup lemon juice

2 tsp garlic

1 cup greek yogurt

2 Tbsp. flour

1/4 cup milk

1 tsp parsley

salt & pepper

Enough rice to feed your family

Directions:

1. Slice the chicken breasts in half lengthwise. This will help them cook faster and be easier to serve. Place them in a large skillet or saucepan over medium heat.

2. While they are cooking, mix the lemon juice, garlic, and greek yogurt together. (I used about half the greek yogurt to begin with and added more in later to thicken the sauce.)

3. When the chicken has developed a white coat around the outside edges, pour in about 3/4 of the lemon sauce. I like to save some until the end because some of the sauce will cook down.

4. Continue cooking the chicken, flipping often. Make sure you really rub the chicken in the sauce to keep it mostly covered.

5. Begin cooking rice according to package directions. Mine takes about 10 minutes, so I wait until I think that’s about how much longer the chicken needs to cook so that they are finished around the same time.

6. At this point, you want to begin making the “gravy” by adding in the flour, milk, and spices to the lemon sauce around the chicken. Because you are still cooking the chicken in the same pan, I sorta used the chicken pieces to swirl around and mix up the gravy! This also allows the chicken to be coated in the gravy sauce.

7. When the chicken is finished cooking, remove from pan and serve on a bed of rice. Use a large spoon to retrieve gravy from the pan, and pour it over the chicken and rice. I also served with baked asparagus!

Serves 3-4.

Alternate Variations:

– Add onion in with the first round of sauce so that they cook thoroughly.

– I always change up the spices, so add whatever your family loves!
